Pad Kra Pao (Thai Basil Stir-Fry with Pork)

Pad Kra Pao is one of the most popular everyday meals in Thailand. It is a fast stir-fry made with minced pork, garlic, chili and Thai holy basil. It is usually served with jasmine rice and a fried egg on top. This dish is spicy, savory and slightly salty.

Ingredients

  • 300 g minced pork
  • 2 cloves garlic, finely chopped
  • 1-2 red chilies, finely sliced
  • 1 tbsp vegetable oil
  • 1 tbsp fish sauce
  • 1 tbsp light soy sauce
  • 1 tsp sugar
  • 1 handful Thai basil (holy basil preferred, sweet basil possible substitute)

For serving:

  • 2 portions jasmine rice
  • 2 fried eggs

Instructions

  1. Heat oil in a pan over high heat.
  2. Add garlic and chili. Stir for 20 seconds until fragrant.
  3. Add minced pork and cook, breaking it apart.
  4. Cook 4-5 minutes until no longer pink.
  5. Add fish sauce, soy sauce and sugar. Mix well.
  6. Turn off heat and add basil leaves. Stir quickly until wilted.
  7. Serve over hot jasmine rice with a fried egg on top.
