The chicken is simmered in a mixture of soy sauce, vinegar, garlic and spices until tender, then slightly reduced to create a glossy sauce. It is commonly served with rice and is loved for its simple ingredients and deep flavor.

Ingredients

  • 600 g chicken thighs
  • 3 tbsp soy sauce
  • 3 tbsp vinegar
  • 3 garlic cloves, crushed
  • 1 bay leaf
  • 1/2 tsp black pepper
  • 1 tbsp oil
  • 150 ml water

Typical side:

  • white rice

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add chicken and brown lightly on both sides.
  3. Add garlic and cook briefly.
  4. Pour in soy sauce, vinegar and water.
  5. Add bay leaf and black pepper.
  6. Bring to a simmer and cook for 25-30 minutes until chicken is tender.
  7. Remove the lid and let the sauce reduce slightly until glossy.
  8. Serve warm with rice.
