Bandeja Paisa yra vienas garsiausių Kolumbijos patiekalų. Jis kilęs iš Antioquia regiono, bet dabar valgomas visoje šalyje. Tai didelė, sotus lėkštė su ryžiais, pupelėmis, malta mėsa, kepta kiauliena, kiaušiniu ir avokadu. Patiekalas labai sotus ir dažnai valgomas pietums. Tradiciškai tai buvo ūkininkų maistas, skirtas suteikti daug energijos. Namuose jis ruošiamas paprastai, be restoraninių dekoracijų.

Ingredients

  • 400 g dried red beans (or 2 cans cooked beans)
  • 300 g ground beef
  • 200 g pork belly slices
  • 4 eggs
  • 2 cups cooked white rice
  • 1 ripe avocado, sliced
  • 2 sausages (chorizo style)
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • Salt
  • Black pepper
  • Oil for frying

Typical side:

  • Arepa (Colombian corn cake)

Instructions

  1. If using dried beans, soak overnight and cook until soft. If using canned, rinse and heat.
  2. In a pan, cook ground beef with onion, garlic, salt and pepper until browned.
  3. Fry pork belly slices until crispy.
  4. Cook sausages until fully done.
  5. Fry eggs sunny side up.
  6. Arrange on a large plate: rice, beans, ground beef, pork belly, sausage, fried egg and avocado slices.
  7. Serve immediately with arepa on the side.
