Ingredients

  • 250 g mascarpone (soft creamy cheese)
  • 3 eggs
  • 80 g sugar
  • 200 g ladyfingers (savoiardi biscuits)
  • 250 ml strong coffee, cooled
  • Cocoa powder

Instructions

  1. Separate egg yolks and egg whites into two bowls.
  2. Mix egg yolks with sugar until light and smooth.
  3. Add mascarpone and mix until creamy.
  4. Beat egg whites until stiff.
  5. Gently fold egg whites into the mascarpone cream.
  6. Dip ladyfingers quickly into coffee (do not soak).
  7. Place a layer of biscuits in a dish, then add cream.
  8. Repeat layers and finish with cream.
  9. Dust with cocoa powder.
  10. Chill in the fridge for at least 2 hours before serving.
