Ingredients

  • 1 tablespoon butter or oil

Instructions

  1. Rinse the split peas under cold water.
  2. In a pot, heat butter or oil over medium heat.
  3. Add onion, carrot, and celery. Cook for 5 minutes until slightly soft.

  5. Bring to a boil, then reduce heat.
  6. Simmer uncovered for 50-60 minutes until peas are very soft.
  7. Stir occasionally and add water if too thick.
  8. Remove bay leaf.
  9. Lightly blend with a hand blender for smoother texture, or leave chunky.
  10. Season with salt and black pepper before serving.
