Ingredients

  • 250 g filo pastry
  • 300 g spinach (fresh or frozen, drained)
  • 150 g feta cheese
  • 1 small onion, chopped
  • 1 tbsp oil
  • 1 egg
  • salt and black pepper

Instructions

  1. Heat oil in a pan and cook onion until soft.
  2. Add spinach and cook until wilted.
  3. Let cool slightly.
  4. Crumble feta into the spinach mixture.
  5. Add egg, salt and pepper, then mix well.
  6. Layer filo sheets in a baking dish, brushing lightly with oil between layers.
  7. Add the filling evenly.
  8. Cover with more filo sheets on top.
  9. Score into squares before baking.
  10. Bake at 180°C for about 35-40 minutes until golden and crispy.
  11. Let cool slightly before serving.
