Ingredients
For the chicken
- 2 chicken breasts
- Salt and black pepper
- 2 tbsp flour
- 1 lemon (juice and zest)
- 1 tbsp olive oil
- 1 tbsp butter
For the potatoes
- 400 g potatoes, peeled and sliced
- 2 tbsp olive oil
- Salt
- Dried rosemary or fresh herbs (optional)
Instructions
Potatoes
- Heat olive oil in a large pan on medium heat.
- Add potato slices in one layer and sprinkle with salt.
- Cook slowly for 15-8 minutes, turning often, until golden and soft.
- Add herbs at the end and keep warm.
Chicken
5. Cut chicken breasts horizontally into thin pieces.
6. Season with salt and pepper, then lightly coat with flour.
7. Heat olive oil and butter in another pan.
8. Cook chicken for 2-3 minutes per side until golden. Remove from pan.
9. Add lemon juice and zest to the pan and scrape the bottom with a spoon.
10. Return chicken to the pan, coat with sauce, and serve with potatoes.
