Ingredients

For the dough:

  • 300 g all-purpose flour
  • 1/2 tsp salt
  • 1 tsp sugar
  • 180 ml water
  • 2 tbsp oil

For cooking:

  • extra oil for frying

For dipping curry:

  • 1 tbsp oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp curry paste
  • 200 ml coconut milk
  • 200 ml water
  • salt

Instructions

  1. In a bowl, mix flour, salt and sugar.
  2. Add water and oil, then knead until smooth dough forms.
  3. Cover and let rest for at least 30 minutes.
  4. Divide dough into small balls.
  5. Roll each ball very thin, almost transparent.
  6. Fold into layers to create flaky texture.
  7. Heat a pan with a little oil.
  8. Fry each roti until golden and crispy on both sides.
  9. For the curry, heat oil in a pan.
  10. Add onion and cook until soft.
  11. Add garlic and curry paste, cook briefly.
  12. Pour in coconut milk and water.
  13. Simmer for 10 minutes and season.
  14. Tear roti into pieces and serve with warm curry dip.
