Pinakbet is a traditional Filipino vegetable dish made with a mix of local vegetables such as eggplant, green beans, squash and okra. Ingredients

  • 1 eggplant, sliced
  • 1 zucchini, sliced
  • 150 g green beans
  • 1 carrot, sliced
  • 1 tomato, chopped
  • 2 garlic cloves, minced
  • 2 tbsp oil
  • 2 tbsp soy sauce
  • 50 ml water
  • salt

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add garlic and cook briefly.
  3. Add tomato and cook until slightly soft.
  4. Add all vegetables and stir gently.
  5. Add soy sauce and water.
  6. Cook for 10-15 minutes until vegetables are tender but still hold shape.
  7. Season with salt if needed.
  8. Serve warm.
