Moros y Cristianos (Cuban Rice and Black Beans)

Moros y Cristianos is one of the most traditional Cuban dishes. The name means “Moors and Christians” and refers to black beans and white rice cooked together. In Cuba, this dish is eaten as a main meal, especially at home. It is simple, filling and full of flavor.

Ingredients

  • 1 cup white rice
  • 1 cup cooked black beans (with a little of their cooking liquid)
  • ½ onion, finely chopped
  • 1 green bell pepper, finely chopped
  • 2 cloves garlic, chopped
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 bay leaf
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion, green pepper and garlic. Cook until soft.
  3. Add cumin, bay leaf, salt and pepper. Stir briefly.
  4. Add rice and mix well so it is coated with oil and spices.
  5. Add black beans and about 2 cups water (or bean cooking liquid).
  6. Bring to a boil, then reduce heat and cover.
  7. Cook gently for about 20 minutes until rice is soft and liquid absorbed.
  8. Remove bay leaf and fluff gently with a fork.
  9. Serve hot.
