Ingredients

  • 3 eggs
  • 150 g sugar
  • 120 ml vegetable oil
  • 120 ml fresh orange juice
  • Zest of 1 orange
  • 200 g all-purpose flour
  • 2 teaspoons baking powder
  • A pinch of salt

Typical serving:

  • Powdered sugar on top
  • Moroccan mint tea

Instructions

  1. Preheat oven to 180°C.
  2. In a large bowl, beat the eggs and sugar until slightly pale and smooth.
  3. Add vegetable oil and mix well.
  4. Add fresh orange juice and orange zest. Stir to combine.
  5. In a separate bowl, mix flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture. Stir until smooth. Do not overmix.
  7. Pour the batter into a greased round cake pan (about 22 cm).
  8. Bake for 30-35 minutes until a toothpick inserted in the center comes out clean.
  9. Let cool for 10 minutes, then remove from the pan.
  10. Dust lightly with powdered sugar before serving.
