Khao Pad (Thai Fried Rice)

Khao Pad is a very common Thai dish made at home and in small street stalls. It uses leftover rice and simple ingredients. It is often served with lime wedges and fresh cucumber.

Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 2 eggs
  • 150 g chicken or shrimp (optional)
  • 2 cloves garlic, chopped
  • 1 tbsp vegetable oil
  • 1 tbsp fish sauce
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 2 spring onions, chopped

For serving:

  • Lime wedges
  • Fresh cucumber slices

Instructions

  1. Heat oil in a wok.
  2. Add garlic and cook briefly.
  3. Add chicken or shrimp (if using) and cook until done.
  4. Push to one side. Crack eggs into pan and scramble.
  5. Add rice and break up clumps.
  6. Add fish sauce, soy sauce and sugar. Stir well.
  7. Add spring onions and mix.
  8. Serve with lime and cucumber on the side.
