
Khao Pad is a very common Thai dish made at home and in small street stalls. It uses leftover rice and simple ingredients. It is often served with lime wedges and fresh cucumber.

Ingredients
- 2 cups cooked jasmine rice (preferably day-old)
- 2 eggs
- 150 g chicken or shrimp (optional)
- 2 cloves garlic, chopped
- 1 tbsp vegetable oil
- 1 tbsp fish sauce
- 1 tsp soy sauce
- 1 tsp sugar
- 2 spring onions, chopped
For serving:
- Lime wedges
- Fresh cucumber slices
Instructions
- Heat oil in a wok.
- Add garlic and cook briefly.
- Add chicken or shrimp (if using) and cook until done.
- Push to one side. Crack eggs into pan and scramble.
- Add rice and break up clumps.
- Add fish sauce, soy sauce and sugar. Stir well.
- Add spring onions and mix.
- Serve with lime and cucumber on the side.
