Churros Caseros (Traditional Mexican Churros)

Churros are fried dough sticks coated in sugar. In Mexico, they are sold in markets, parks and small family bakeries. They are crispy outside and soft inside. They are usually served warm with cinnamon sugar. Sometimes they are eaten with hot chocolate. This is a simple home version without special machines.

Ingredients

  • 240 ml water
  • 2 tbsp sugar
  • 2 tbsp vegetable oil
  • 140 g all-purpose flour
  • 1 egg
  • 1 pinch salt
  • Vegetable oil for frying

For coating:

  • 50 g sugar
  • 1 tsp ground cinnamon

For serving (optional but traditional):

  • Mexican hot chocolate

Instructions

  1. In a pot, combine water, sugar, oil and salt.
  2. Bring to a gentle boil over medium heat.
  3. Remove from heat and add flour all at once.
  4. Stir quickly with a wooden spoon until a thick dough forms.
  5. Let cool 5 minutes.
  6. Add egg and mix until smooth and slightly sticky.
  7. Heat oil in a deep pan over medium heat. The oil should be hot but not smoking.
  8. Place dough in a piping bag with a star tip (or use a plastic bag with a corner cut).
  9. Pipe 10-12 cm strips directly into hot oil.
  10. Fry 2-3 minutes per side until golden brown.
  11. Remove and place on paper towel.
  12. Mix sugar and cinnamon in a bowl.
  13. Roll warm churros in the mixture.
  14. Serve immediately while warm.
