
Alfajores are one of the most famous sweets in Argentina. They are soft cookies filled with dulce de leche (milk caramel spread). They are eaten with coffee or mate (traditional South American herbal drink).

Ingredients
- 120 g butter (soft)
- 100 g sugar
- 2 egg yolks
- 1 tsp vanilla extract
- 200 g flour
- 100 g corn starch
- 1 tsp baking powder
- 300 g dulce de leche (milk caramel spread)
- Powdered sugar (optional)
Instructions
- Preheat oven to 170°C.
- In a bowl, mix butter and sugar until smooth.
- Add egg yolks and vanilla. Mix gently.
- In another bowl, combine flour, corn starch and baking powder.
- Add dry ingredients slowly to butter mixture. Mix until soft dough forms.
- Roll dough on a lightly floured surface to about 5 mm thickness.
- Cut into small circles (about 5 cm diameter).
- Place on baking tray lined with baking paper.
- Bake 10-12 minutes. Cookies should stay pale, not brown.
- Let cool completely.
- Spread dulce de leche on one cookie and place another on top.
- Dust lightly with powdered sugar if desired.
