Ingredients
- 2 tbsp oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 tbsp tomato paste
- 3 tbsp peanut butter (unsweetened)
- 600 ml water or vegetable broth
- 1 carrot, cut into chunks
- 1 potato, cut into chunks
- 1 small eggplant, cut into pieces
- 1 zucchini, sliced
- salt and black pepper

Instructions
- Heat oil in a pot over medium heat.
- Add onion and cook until soft.
- Add garlic and cook for 1 minute.
- Stir in tomato paste and cook briefly.
- Add peanut butter and mix until combined.
- Pour in water or broth and stir until smooth sauce forms.
- Add vegetables and mix well.
- Simmer for 20-25 minutes until vegetables are tender and sauce thickens.
- Season with salt and pepper.
- Serve warm with rice.
