Ingredients
- 2 cups corn kernels (fresh or canned, drained)
- 1 egg
- 2 tbsp milk
- 2 tbsp flour
- 1/2 tsp salt
- 1 tsp sugar
- butter for cooking
- 150 g fresh cheese (mozzarella or similar)
Typical side:
- butter
- or a bit of cream
Instructions
- Blend corn, egg, milk, flour, salt and sugar until a thick batter forms.
- Heat a pan over medium heat and add a little butter.
- Pour batter into the pan and shape into a thick round pancake.
- Cook for about 3-4 minutes until golden on the bottom.
- Flip and cook the other side.
- Place cheese on one half while still warm.
- Fold the cachapa and let the cheese melt inside.
- Serve warm.
