Misir Wat is one of the most common vegetarian dishes in Ethiopia and is eaten across the country, especially during fasting periods when animal products are avoided. It is a thick red lentil stew cooked with onions, garlic and berbere spice blend, giving it a deep red color and rich flavor. The dish is traditionally served on injera and eaten by hand, using pieces of flatbread to scoop up the stew. This home version keeps the authentic flavor while using ingredients that are easy to find.

Ingredients

  • 2 cups red lentils, rinsed
  • 2 large onions, very finely chopped
  • 3 tbsp vegetable oil
  • 2 tbsp berbere spice mix
  • 3 garlic cloves, minced
  • 1 tbsp grated fresh ginger
  • 2 tbsp tomato paste
  • 3 cups water or vegetable stock
  • Salt

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add the chopped onions and cook slowly, stirring often, until very soft and lightly golden. This takes about 15 minutes.
  3. Add garlic and ginger and cook for 1 minute.
  4. Stir in the berbere spice mix and tomato paste. Cook gently for 2-3 minutes to release the aroma.
  5. Add the rinsed red lentils and mix well.
  6. Pour in the water or vegetable stock and bring to a gentle boil.
  7. Reduce heat to low and simmer for 20-25 minutes, stirring occasionally, until the lentils are very soft.
  8. If the stew becomes too thick, add a small amount of hot water.
  9. Adjust salt and simmer a few more minutes until thick and creamy.
  10. Serve hot on top of injera.
