Poutine is one of the most recognized dishes in Canada. It comes from Quebec but is now eaten across the whole country. It is made with crispy fries topped with fresh cheese curds and hot brown gravy. The heat slightly melts the cheese, but it should still keep its shape. It is often served in casual restaurants, diners, and fast food spots. This version follows the classic home-style preparation.

Ingredients

  • 800 g potatoes
  • Oil for frying
  • Salt
  • 200 g fresh cheese curds (young cheddar curds)

For the gravy:

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 400 ml beef broth
  • Black pepper
  • Salt

Instructions

  1. Peel the potatoes and cut into thick fries.
  2. Rinse in cold water and dry well with a towel.
  3. Heat oil to 170°C. Fry the potatoes for about 5-6 minutes. Remove and let rest.
  4. Increase oil temperature to 190°C. Fry again for 2-3 minutes until golden and crisp. Salt immediately.
  5. In a saucepan, melt butter over medium heat.
  6. Add flour and stir for 1-2 minutes to form a smooth paste.
  7. Slowly add beef broth while stirring to avoid lumps.
  8. Simmer for 5-7 minutes until thickened. Season with salt and black pepper.
  9. Place hot fries on a serving plate.
  10. Scatter cheese curds over the fries.
  11. Pour hot gravy over the top. Serve immediately.
