Ingredients
- 2 tablespoons oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon grated ginger
- 400 g canned chopped tomatoes
- 2 cans (400 g each) chickpeas, drained and rinsed
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala (Indian spice blend)
- ½ teaspoon turmeric
- ½ teaspoon chili powder (adjust to taste)
- Salt
- 150 ml water
Typical side:
- Basmati rice
- Roti or naan
Instructions
- Heat oil in a large pan over medium heat.
- Add chopped onion and cook for 6-8 minutes until soft and lightly golden.
- Add garlic and ginger. Cook for 1 minute.
- Add cumin, coriander, garam masala, turmeric, and chili powder. Stir for 30 seconds to release aroma.
- Add chopped tomatoes and cook for 8-10 minutes until slightly thickened.
- Add chickpeas, water, and salt. Stir well.
- Simmer on low heat for 15-20 minutes until the sauce thickens.
- Taste and adjust salt if needed.
- Serve hot with rice or flatbread.
