Ingredients

  • 2 tablespoons oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 400 g canned chopped tomatoes
  • 2 cans (400 g each) chickpeas, drained and rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala (Indian spice blend)
  • ½ teaspoon turmeric
  • ½ teaspoon chili powder (adjust to taste)
  • Salt
  • 150 ml water

Typical side:

  • Basmati rice
  • Roti or naan

Instructions

  1. Heat oil in a large pan over medium heat.
  2. Add chopped onion and cook for 6-8 minutes until soft and lightly golden.
  3. Add garlic and ginger. Cook for 1 minute.
  4. Add cumin, coriander, garam masala, turmeric, and chili powder. Stir for 30 seconds to release aroma.
  5. Add chopped tomatoes and cook for 8-10 minutes until slightly thickened.
  6. Add chickpeas, water, and salt. Stir well.
  7. Simmer on low heat for 15-20 minutes until the sauce thickens.
  8. Taste and adjust salt if needed.
  9. Serve hot with rice or flatbread.
