
Tajine Khodra is a traditional Moroccan vegetable dish. It is widely eaten across the country, especially as a family meal. It is made with seasonal vegetables, chickpeas, tomatoes, and warm spices. The vegetables cook slowly and become soft and flavorful. Traditionally, it is cooked in a clay tagine pot. At home, you can prepare it in a heavy pot with a lid.

Ingredients
- 2 tablespoons olive oil
- 1 large onion, sliced
- 2 garlic cloves, minced
- 2 carrots, cut into thick sticks
- 1 zucchini, sliced
- 1 potato, cut into chunks
- 1 red bell pepper, sliced
- 200 g canned chickpeas, drained
- 2 ripe tomatoes, chopped (or 200 ml tomato passata)
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- ½ teaspoon ground turmeric
- ½ teaspoon paprika
- Salt
- Black pepper
- 200 ml water
- Fresh coriander for garnish
Typical side:
- Moroccan bread (khobz – round flat bread)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until soft, about 5 minutes.
- Add garlic and cook for 30 seconds.
- Add carrots, potato, zucchini, and bell pepper. Stir gently.
- Add cumin, ginger, turmeric, paprika, salt, and black pepper. Mix well so the vegetables are coated.
- Add chopped tomatoes and water. Stir.
- Cover and cook on low heat for about 30-35 minutes until vegetables are tender. Stir once or twice gently.
- Add chickpeas during the last 10 minutes of cooking.
- Taste and adjust seasoning if needed.
- Garnish with fresh coriander and serve hot with bread.
