Ingredients
- 8 small corn tortillas
- Oil for frying
- 200 g cooked black beans
- 1 cup finely shredded cabbage
- 1 small tomato, finely chopped
- ½ small onion, finely chopped
- 1 tablespoon lime juice
- 1 ripe avocado, sliced
- 80 g fresh white cheese (queso fresco – mild crumbly cheese)

Instructions
- Heat oil in a frying pan over medium heat.
- Fry each corn tortilla for about 1-2 minutes per side until golden and crispy. Remove and place on paper towel to drain.
- Blend or mash the black beans until smooth and spreadable.
- In a small bowl, mix shredded cabbage, chopped tomato, onion, lime juice, and a pinch of salt.
- Spread a thin layer of mashed beans over each crispy tortilla.
- Add a spoon of the cabbage mixture on top.
- Place a few slices of avocado over the salad.
- Sprinkle crumbled fresh cheese on top.
- Serve immediately while the tortillas are still crisp.
