Suya is one of the most popular street foods in Nigeria. It is spicy grilled beef coated with suya spice mix. It is sold in the evening on the streets and eaten with sliced onion and tomato. Traditionally it is grilled over charcoal. Below is an easy home version using a pan or oven.

Ingredients

  • 400 g beef (thinly sliced)
  • 2 tbsp peanut butter (unsweetened)
  • 1 tsp paprika
  • 1 tsp chili powder
  • ½ tsp ground ginger
  • ½ tsp garlic powder
  • ½ tsp salt
  • 1 tbsp vegetable oil

Typical side:

  • Sliced onion
  • Sliced tomato

Instructions

  1. Slice beef very thin (about 3-4 mm thick).
  2. In a bowl, mix peanut butter, paprika, chili powder, ginger, garlic powder and salt.
  3. Add oil and mix until it becomes a thick paste.
  4. Coat beef slices evenly with the spice paste.
  5. Let marinate 10-15 minutes.
  6. Heat a pan over high heat.
  7. Cook beef 2-3 minutes per side until browned.
  8. Do not overcrowd the pan.
  9. Serve immediately with sliced onion and tomato.
